Well, we went from a mild fall to full on winter this week. Negative wind chills and near 0 temps. All I can think about is constantly sipping warm tea and bundling up in cozy sweaters. I have TX friends in town this weekend and I can’t wait to show them Chicago all dressed up for the holidays. I hope you have a great weekend! Be back soon with some yummy gingerbread chocolate cookies.

better than DD

Summer has finally arrived in Chicago.  Today, as I headed to the market at 7AM sharp, it was already 80 degrees.  As someone who spent the first 22 years of her life in Texas (and most of those summers in unbearable hot and humid Houston) I wasn’t very happy about it.  Sure I was getting pretty sick of the 50 degree and rainy days in early June, but high of 93 in Chicago on June 24th?  No thank you.  However, the one perk (pun intended) of summer’s arrival is Iced Coffee.

TWD #5: Lenox Almond Biscotti

Simple ingredients, yet so so very good.


These are AWESOME.  I used vanilla extract since I didn’t have any almond extract on hand and added a decent amount of good cinnamon.  I had to bake them a few extra minutes on each bake.

I also took the advice from some on the TWD website and put a cooling rack on the baking sheet and laid them on the side for the 2nd bake.  I flipped them after 15 mins and baked them for another 5.

Perfectly crunchy without being rock hard.   Dave and I have been enjoying them for dessert with a glass of Disaronno on the rocks and dunked into coffee for breakfast. (BTW…I love this mug

!)

I will def. be making these again.  Dorie was right, make these in double batches 🙂
