Pimm's Cup

Today has been a good day. After weeks of unemployment, endless wedding crafting, days and days of rain in Chicago, days and days of hot and dry and wildfires in my home state of Texas, massive tornados and many other terrible things in the world, I woke up to sunny skies and just in time to see the Royal Kiss.

I wasn’t one to be obsessed about William and Kate’s wedding. Sure I was excited to see her dress but I didn’t expect to enjoy the coverage so much. It was wonderful to see something happy and positive on the world stage than the constant doom and gloom of late.

The Royal Wedding paired with the fact that it was actually sunny and borderline not chilly today gives me a perfect excuse to share with you a wonderful drink of British roots; the Pimm’s Cup. A simple Pimm’s Cup became my drink last summer because it is refreshing and not too boozy. So on this sunny almost May, Royal Wedding Friday, Cheers!

Pimm’s Cup
I’m a simple girl and can just mix some Pimms with diet Sprite and call it a day but you can go fancier and tastier with some garnishes.

Pimm’s No. 1 Cup
Diet Spite/7up/or any Lemon-Lime Soda of choice, also good with ginger beer
Traditional (yet totally optional) garnishes:
Cucumber
Strawberries
Orange
Lemon
Green Apple
Mint

Fill a tall glass with ice. Pour about 1/3 Pimm’s No.1 into the glass. Top with lemon-lime soda and any garnishes. Stir. Enjoy.

  1. I just had this for the first time last night at our royal wedding party and had been reading about Pimm’s the day before. Suzy, my British friend, is the one who brought it to the party. We did Pimm’s, Sprite, oranges, lemons, apples, and cucumber. So good!
